Ingredients & Notes
- Roasted Vermicelli – Roasted vermicelli is often available at Indian and Pakistani stores. This cuts down on the cook time for the recipe.
- Ghee or butter – Traditionally, ghee is used for this recipe, and is well worth the splurge for this simple dessert.
- Green Cardamom powder – this spice has a floral taste that is perfect for South Asian dessert recipes.
- Raisins and Almonds – the dry fruits and nuts add texture to the meethi seviyan. You can also change it up with your favorite nuts, or leave them out if you like.
How to make Meethi Seviyan?
In a bowl, add sugar and 1 cup of water. Mix well to dissolve the sugar.
In a pot over low heat, add ghee. Once melted, add green cardamom powder and vermicelli. You can add the vermicelli whole, or break it into smaller pieces.
Cook on low heat for 5-7 minutes till roasted.
Once roasted, add the sugar, water, and raisins and mix well and cover and simmer.
After 7-10 minutes, check to see if vermicelli is soft.
Check if you need to add sugar and/or water at this stage. Adjust, and cover. Simmer on low heat until water is absorbed.
Garnish with sliced almonds.
Recipe Tips
Vermicelli noodles and seviyan are the same. We prefer to use thin, roasted seviyan for this recipe.
Roasted vermicelli is usually available at Indian and Pakistani stores (or on Amazon). This cuts down on the cooking time for the recipe. We prefer to use thinner vermicelli noodles for this.

This dessert is a stand-alone dessert, perfect for any occasion. It can be enjoyed as dessert, or a snack with your afternoon Karak Chai.

Ingredients
- 1 packet vermicelli 150 grams
- ½-¾ cup sugar
- ¼ cup ghee or butter
- ¼ cup raisins
- 5-7 sliced almonds
- 1 teaspoon Green Cardamom powder
Instructions
- In a bowl, add sugar and 1 cup of water mix well to dissolve the sugar.
