In a large pot, add 4-6 cups of water, 1-2 teaspoons of salt and add potatoes. Boil the potatoes until they are tender. You should be able to pierce a knife through it.
Remove the potatoes from the water, and set them on a tray to cool.
Once cooled, peel the potatoes and cut them into 1-inch cubes.
Aloo Ki Bhujia (potato curry)
In a pot on medium heat, add the oil.
Once hot add the mustard seeds and saute till the mustard seeds crack
Reduce the heat to low, then add the ground spices, turmeric, cumin powder, coriander powder, and salt. Mix well
Once well incorporated, add the diced potatoes and mix gently so that the potatoes do not break.
Add sliced green chilli and cover to cook for 3-5 minutes. Remove from heat and garnish with chopped cilantro.
Serve with fresh puri, roti or your favorite side dishes.
