These are the spices that are commonly found in Pav Bhaji.
- Coriander seeds – Dhaniya – a common spice used in lots of recipes, adding a floral aroma to the spice blend.
- Cumin seeds – Zeera – another common spice that is used in many recipes, adding a warm, earthy taste.
- Bay leaves – this spice is a fragrant leaf from the laurel tree, used whole or ground.
- Cloves – a warm and earthy spice with a very potent aroma.
- Black Cardamom – this is an essential spice in this blend and has a warm and smoky flavor.
- Cinnamon – this is a popular spice used in a variety of sweet & savoury dishes.
- Black peppercorns – a popular spice with a spicy flavor.
- Red Chilli – we used dried red chillis in this to add a ton of spice that pav bhaji is known for. Adjust the amount to your preference
- Turmeric powder or Haldi – is a bright yellow spice that has a bold earthy flavor, sometimes a little bitter. It is known for its anti-inflammatory properties.
- Amchur Powder or Dried Mango powder – a fruity ground spice made with raw/unripe mangoes and gives the dish a tangy taste. We also use it in other recipes such as Aloo Paratha, Dal Puri and Chana Aloo Masala.
How to make Pav Bhaji Masala?
In a pan on low heat add all the ingredients except Turmeric and Mango powder. Roast till fragrant. Cool the mixture completely.
To a blender, add the roasted spices with turmeric and mango powder. Blend well.
Store in an airtight container for 3-6 months.

- You can make this pav bhaji masala with ready-made ground spices. However, roasting whole spices results in a more flavorful blend.

Ingredients
- 4 tablespoon Dhaniya
- 2 tablespoon Cumin
- 1 bay leaf
- 10 cloves
- 2 Cardamom
- 2 ” Cinamon
- 1 tablespoon Black pepper
- 10 Red chilli
- 1 tsp Turmeric powder
- 1 tablespoon Mango powder
Instructions
