Ingredients & Notes
- Potatoes – any type of potatoes can be used. You’ll want to boil them ahead of time, let them cool, and cut them into bite-sized pieces.
- Spices – mustard seeds, turmeric powder, coriander powder, cumin powder – these earthy spices complement the potatoes to make a delicious curry.
- Herbs – Cilantro and green chilli – add freshness and some spice to this simple potato dish.
How to make Aloo ki Bhujia?
In a pot on medium heat, add the oil.
Once hot add the mustard seeds and saute till the mustard seeds crack
Reduce the heat to low, then add the ground spices, turmeric, cumin powder, coriander powder, and salt. Mix well.
Once well incorporated, add the diced potatoes and mix gently so that the potatoes do not break.
Add sliced green chilli and cover to cook for 3-5 minutes. Remove from heat and garnish with chopped cilantro.

Aloo Ki Bhujia
Ingredients
- 2-3 medium potato boiled and diced 1 inch squares
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- ½ teaspoon cumin powder
- ¼ cup oil
- Cilantro chopped
- Green chili
- Salt to taste
Instructions
Boil the Potatoes
- In a large pot, add 4-6 cups of water, 1-2 teaspoons of salt and add potatoes. Boil the potatoes until they are tender. You should be able to pierce a knife through it.
- Remove the potatoes from the water, and set them on a tray to cool.
- Once cooled, peel the potatoes and cut them into 1-inch cubes.
