Today is the third day of our DIY Holiday Treat Box Series!

DIY Holiday Treat Box

Mom and I have been working on a DIY Holiday Treat Box for this year! Since the holidays will look different for us all this year, this treat box can be a fun way to share sweets and treats with your neighbors, friends, and families!

Over the next five days, we’ll be releasing a new recipe that would make a perfect addition to your treat box. And on the last day, we’ll reveal the whole holiday treat box, as well as lots of tips to create and assemble your own!

Tips for Date & Graham Cracker Log

  • Make sure to heat the dates on low heat so that they don’t burn.
  • The coconut oil helps to soften the dates a little more.
  • We used Graham crackers but you can experiment with any number of add-ins, such as your favorite nuts! Almonds & pistachios would be great for this!

How to store Date & Graham Cracker Log?

This log keeps for at least 2 weeks at room temperature.

Date & Graham Cracker Log

This simple to make date and graham cracker log is a beautiful treat you can just slice and enjoy!

Ingredients
  

  • ½ lb seedless dates, pitted
  • 4-6 Graham crackers chopped
  • 1-2 teaspoons Coconut oil
  • 1/4 cup dessicated coconut

Instructions
 

  • In a pan, on low heat add dates and coconut oil. Cook until the dates are soft, and pliable.
  • Once softened, cool for a few minutes, so you can handle them.
  • Add chopped graham crackers and mix lightly to incorporate into the dates.
  • Shape the mixture into a log. Then, spread the dessicated coconut on your work surface, and roll the log so that it is covered in coconut.
  • Wrap the log with cling film and refridgerate for at least two hours to set.
  • To serve, slice couple the log into 1-inch pieces.
