Add the Sabudana wash in a bowl and soak for at least 4 hours or overnight. Ensure the water level is above the sabudana as the pearls will soak up the water and puff up as they sit. s it will puff up as they soak.
When ready to cook, check if the pearls are soaked enough. When soaked well, the pearl will mash entirely and not have a hard center.
Strain the soaked pearls using a sieve to remove excess water.
Sabudana Khichdi
Add peanuts to a pan over low heat and cook for a few minutes, ensuring it does not burn. Take it out from the pan and let it cool.
Add oil, curry leaves, and sliced green chili to a pot on medium heat.
Add the diced boiled potato and cook for a couple of minutes. Add the strained sabudana pearls and salt, sugar, and lemon juice.
Mix it gently, being careful not to mash the pearls. Cook for a few minutes until the tapioca pearls turn transparent.
Add in the roasted peanuts and, garnish with chopped cilantro and sliced green chili, and enjoy.
