Sheer Khurma Ingredients
- Sevaiyya or thin roasted vermicelli – opt for fine or thin roasted vermicelli. This is usually available at Asian markets
- Whole Milk – We recommend using whole milk for the right texture. A combination of 2% milk with cream or half and half may also work.
- Sweetened Condensed Milk – this helps reduce the cooking time, and thickens the dessert to the right consistency.
- Almonds, Pistachios, and Raisins – These add some crunch and texture to this classic dessert
- Cardamom Powder, and Saffron – these flavors are infused in the milk and lend to the traditional taste of Sheer Khurma. Saffron can get expensive but it is worth it for this festive dessert.
Tips for Sheer Khurma
This classic Eid dessert comes together in a short amount of time.
- While heating the milk, make sure to only gently heat the milk to avoid it from boiling over.
- You can also add sliced dried dates to the milk if you like. The dried dates will need to be soaked overnight, then sliced before adding to the milk.
- Since we are using condensed milk in this recipe, we don’t typically add sugar. However, if you prefer a sweeter dessert, then adjust to add more sweetened condensed milk or sugar as desired.
- The consistency of sheer khurma is an individual preference. Some prefer a thinner, drink-like texture, while others prefer a thicker dessert. Add more milk if you prefer a thinner consistency. Keep in mind that the sheer khurma will thicken as it cools down.
- Sheer Khurma can be served warm or chilled. It is up to individual preferences.

Sheer Khurma – Vermicelli Pudding for Eid
Ingredients
- 1 packet sevaiyya or thin roasted vermicelli 150 grams
- 4 cups whole milk 1 litre
- ¾-1 can sweetened condensed milk
- almonds and pistachios chopped or slivered, about 10 each, plus more for garnish
- ¼ cup raisins plus more for garnish
- pinch Saffron few strands
- 1 teaspoon cardamom powder
- 1 teaspoon poppy seed optional
- sugar as needed
Instructions
- In a large pot add milk, and heat on medium heat.
- Once the milk is hot and just starting to simmer. Roughly crush the vermicelli and add it to the milk, along with the sweetened condensed milk, saffron, raisins cardamom powder, almonds, and pistachios and poppy seeds if using.
- Cook for 5-7 minutes on medium heat till vermicelli is tender, stirring constantly.
- The vermicelli will soak a lot of the milk as it cooks, as well as when it cools down. Add more milk, condensed milk or sugar, if required to adjust to your preferences.
- Turn off the heat and allow it to cool down.
- Transfer to smaller bowls, and serve warm or chilled, garnished with nuts, and raisins if desired.
