- Sabudana – also known as sago or tapioca pearl, is a type of starch. For this recipe, you’ll want large-sized pearls.
- Potato and peanuts – these help absorb any excess moisture from the Sabudana (sago) so that the pearls are not sticky in the khichri.
- Curry Leaves – Add a lot of flavor to this simple dish.
- Garnish – Lemon juice, green chili, cilantro – add freshness to this dish.
How to make Sabudana Khichdi?
Add the Sabudana wash in a bowl and soak for at least 4 hours or overnight. Ensure the water level is above the sabudana as the pearls will soak up the water and puff up as they sit, as it will puff up as they soak.
When ready to cook, check if the pearls are soaked enough. When soaked well, the pearl will mash entirely and not have a hard center.
Strain the soaked pearls using a sieve to remove any excess water. The pearls will likely soak in most of the water.
Add peanuts to a pan over low heat and cook for a few minutes, ensuring it does not burn. Take it out from the pan and let it cool.
Add oil, curry leaves, and sliced green chili to a pot on medium heat.
Add the diced boiled potato and cook for a couple of minutes. Add the strained sabudana pearls and salt, sugar, and lemon juice.
Mix it gently, being careful not to mash the pearls. Cook for a few minutes until the tapioca pearls turn transparent.
Add in the roasted peanuts and, garnish with chopped cilantro and sliced green chili, and enjoy.
