These Potato Chops are made with deliciously seasoned potato and ground beef mixture, then fried to golden perfection. Crispy on the outside, with a spicy and warm filling on the inside – a perfect appetizer!
At home, growing up, these potato chops were often an appetizer served when we had guests. Sometimes, we’d get lucky, and these potato chops would make an appearance at the dinner table on a weeknight. My siblings and I knew to make sure to get our share because there would never be any left!
We’d dip them in ketchup (usually), or whatever chutney was on the table. But really, the potato chops didn’t really need a dipping sauce.
These Potato Chops are irresistible! Perfectly crispy on the outside, with a slightly spicy and warm filling on the inside. I mean, who can really resist anything fried?

How to make potato Chops?
These are also a great make-ahead recipe. You can make the potato and ground beef mixture, and shape the chops ahead of time. Then coat and fry when you’re ready to serve!
Step #1: Prepare the Potatoes
Boil the potatoes in salted water, until they are tender.
Once they’re cool enough to handle, grate the potatoes, ensuring there are no lumps, and let them cool completely before storing them in the fridge.
Step #2: Prepare the Ground Beef
The ground beef is seasoned with ginger-garlic paste, and ground spices: cumin, garam masala, and black pepper.
When cooking the ground beef, add water to the pot, as it helps keep the ground beef separate rather than creating clumps.
Step #3: Ground Beef & Potato Mixture
Once both the ground beef and potatoes are cooled, mix them together, along with some chopped cilantro and green chilis.
It’s best to use your hands to mix these together to make sure the ground beef is evenly mixed into the potatoes.
Once mixed, start shaping your potato chops. Either shape them in oval logs, or round discs, whichever you prefer!
Once shaped, store them in the fridge until you’re ready to fry them!

These Potato Chops are a great make ahead recipe! You can keep them shaped and ready in the fridge until you are ready to serve them!
Step #4: Assemble & Fry
Once ready to fry, heat oil in a pot or karahi.
Create an assembly station with two bowls: one with a beaten egg, and another with breadcrumbs.
Dip each potato chop into the egg first, then coat them with the breadcrumbs.
Transfer the coated mixture to the hot oil, and fry until golden brown.
Remove and lay on a plate lined with a paper towel, until ready to serve.
A Few More Tips:
- These Potato Chops are best when they are freshly fried. Prepare until step #3, and shape them, then keep them in the fridge until you’re ready to fry them!
- Preparing the ground beef and potatoes ahead of time makes these easier to make. Both the potatoes and ground beef can be stored overnight in the fridge before shaping as well.
- Keep the potatoes and meat as cold as possible will ensure that they do not break apart when frying.
- Either Regular breadcrumbs or panko breadcrumbs are the perfect coating for these Potato Chops.

Potato chops
Ingredients
- 2 lb Potatoes about 3-4 medium potatoes
- 1 lb Ground beef (keema)
- 1 tsp Garlic-ginger paste
- 1 tsp Cumin powder
- ½ tsp Black pepper
- ½ -1 tsp Garam masala
- 2 tbsp cilantro, chopped optional
- 1-2 green chilis, chopped optional
- 1 tsp Salt to taste
- 1 Egg, large
- ½ – 1 cup Bread crumbs
- Oil, for frying
Instructions
- Prepare the potatoes: Boil potatoes with salted water till tender.Once boiled, cool potatoes, then grate potatoes once they are cool enough to handle. Store grated potatoes in the fridge for at least 30-45 mins, or overnight.
- Prepare the ground beef: In a pot or pan, add the ground beef, ginger garlic paste and 1/2 cup cup of water.Cook on medium to high heat, until the ground beef is cooked, and the water is dry. Once cooked add cumin powder, garam masala powder and black pepper.Let ground beef cool to room temperature, then store in fridge for at least 30 minutes, or overnight.
- When ready to make the potato chops, mix the grated potatoes, ground beef, and chopped green chilis and cillantro if using. Mix well.
- Shape the potato and beef mixture in small ovals or little discs. Keep assembled chops in fridge until ready to fry.
- Once ready to fry, heat oil in a pot or karahi.
- Prepare 2 shallow bowls: beat the egg in one bowl, and add the breadcrumbs to the other bowl.
- Once ready to fry, dip each chop in egg and then coat with the breadcrumbs. Transfer to hot oil immediately and fry till golden brown in color
- Serve with a ketchup or hot sauce, or your favorite chutneys.
