Ingredients & Notes

  • Chicken – we usually prefer boneless, skinless chicken thighs for these noodles, for maximum flavor. You can also use chicken breast if you like.
  • Cornstarch – helps make a thick sauce for the seasoned chicken.
  • Noodles – we typically make these with dried Spaghetti wheat noodles, but you can also use fresh egg noodles if you prefer.
  • Sesame seed oil – The sesame oil really shines through in this recipe, you don’t want to skip out on this. We highly recommend using it!
  • Garlic and Onion – are the perfect aromatics to use for this recipe.
  • Mixed vegetables – a frozen blend of peas, carrots, beans and corn is perfect for this recipe. We also add bell pepper, cabbage beans sprouts making this a healthier, and more filling dish.
  • Black and white pepper powder – both black and white have slightly different flavor profiles. The white pepper powder adds a slightly earthy, floral spice to this chicken chowmein noodles.
  • Sauces – red chili sauce, soy sauce, oyster sauce – this combination adds the classic restaurant-style flavors to these noodles. If you prefer you can use a vegetarian mushroom oyster sauce.

How to make Chicken Chow Mein?

Add the sliced chicken, salt, 2 teaspoons of white pepper powder, 2 teaspoons of ground black pepper, 1-2 tablespoons red chilli sauce, 2 tablespoons soy sauce, and 2 tablespoons oyster sauce to a bowl. Mix well.

Add 2 tablespoons of cornstarch, mix well, and set aside for 20-30 minutes.

In the meantime, prepare the noodles.

Boil the noodles in salted water as per package directions.

Drain and keep aside.

In a heavy bottom pan over medium-high heat, add half the oil (¼ cup), thinly sliced onions and mix well.

Add the chopped garlic and mix for a couple of minutes to ensure it does not burn.

Then add the marinated chicken and continue to mix. Once the chicken is cooked, remove it from the pan.

Add the soy sauce, chilli sauce, oyster sauce, and black and white pepper to a separate bowl, and mix well.

Add 2 tablespoons of corn flour and add water to make a slurry.

In the same pan over medium-high heat, add the remaining oil and the vegetables (frozen vegetables, cabbage, bean sprouts and sliced bell peppers).

Add noodles and mix well. Toss in the cooked chicken. Then, add the sauce and mix well to coat the chicken and vegetables. Cook for a couple more minutes, then turn off the heat.

Serving Suggestions

Add the cooked noodles with chicken to a plate and garnish with sliced spring onion and chilli sauce.

Ingredients
  

Chicken Marinade

  • 1 pound or 3-4 thigh boneless thinly sliced
  • 1 teaspoon salt adjust to taste
  • 1 teaspoon Black pepper powder
  • 1 teaspoon white pepper powder
  • 2 tablespoons Red chilli sauce
  • 2 tablespoon Oyster Flavored sauce
  • 2 tablespoon soya sauce
  • 2 tablespoons Oyster Flavored sauce
  • 2 tablespoons cornstarch

Chicken Chow Mein

  • 1 packet 16 oz noodles
  • ½ cup Sesame seed oil
  • 1 tablespoon chopped garlic
  • 1 medium onion sliced
  • 1 teaspoon Black pepper powder
  • 1 teaspoon white pepper powder
  • 2 tablespoon soya sauce
  • 2 tablespoons Red chilli sauce
  • 2 tablespoons Oyster Flavored sauce
  • 2 tablespoons cornstarch
  • 2 cups Mix vegetables frozen or fresh
  • Bell pepper sliced 1 cup
  • 2 cups Bean sprouts
  • 3-4 cups Cabbage thinly sliced
  • Green onion thinly sliced

Instructions
