Royal Falooda: Kulfi Falooda Milkshake

This indulgent royal falooda or kulfi falooda is a popular South Asian layered milkshake made with kulfi (or ice cream), rose milk, basil seeds, and starch noodles.

Falooda Kulfi is what summer dreams are made of! It is the perfect dessert to end a summer meal. It is a cold, refreshing, and indulgent treat that no one can turn down!

Enjoying a Kulfi Falooda is truly an experience. It is a sweet dessert, with lots of taste and texture.

What is Royal Falooda?

Kulfi Falooda or royal falooda is a rose-flavored dessert that’s somewhere between a sundae and milkshake.

Ingredients for Kulfi Falooda

  • Rose Water Simple Syrup or Rooh Afza – The rose water simple syrup is usually used to add rose flavors to the Kulfi Falooda. You can either make it at home or use the ever-popular Rooh Afza, found at many Indian/Pakistani grocery stores.
  • Basil seeds (Tukmaria) – basil seeds have cooling properties, and they add a lot of texture to this drink. You will want to soak the seeds in water until they form a gel coating before using.
  • Falooda Sev – this is a type of vermicelli noodles made with sugar and corn starch. It adds texture to the drink, but feel free to leave this out.
  • Kulfi or ice cream – Traditionally falooda is made with malai kulfi, but it is equally delicious with your favorite ice cream. Swap out the kulfi for vanilla ice cream, or even pistachio for a delicious drink.
  • Pistachios and almonds – sliced nuts are used as a garnish for this delicious summer drink!
  • Milk – The milk is always cold, we usually serve it with 2% milk, but you can use any type of milk, and even oat milk or almond milk would be delicious for this recipe.
  • Tall Glasses – typically falooda is served in tall glasses, with both a straw and a spoon. These milkshake glasses would be perfect!

How to make Royal Falooda?

This royal falooda recipe can be as easy as you’d like it to be. Many of the components are available at grocery stores or can be swapped to adjust to your taste.

Assemble the Falooda

  • Add rose syrup, basil seeds(tukmaria), and falooda Sev
  • Layer on the Kulfi or Ice Cream
  • Top with Milk

This is the order in which we usually like to layer our Falooda milkshakes:

  • Rose simple syrup – add 1-2 tablespoons of rose syrup or Rooh Afza
  • Falooda Sev – add a couple of tablespoons per glass
  • Basil seeds (Tukmaria) – about 1 tablespoon of soaked basil seeds
  • Layer on the Kulfi or ice cream
  • Add milk to top off the glass
  • Garnish with pistachios and almonds, if you like!

You can either assemble for everyone or lay out all the components for your guests to assemble their own drinks!

Royal Falooda: Kulfi Falooda Milkshake

Ingredients
  

Falooda Assembly

  • ½ cup Rose Water Syrup or Rooh Afza (see notes)
  • 2 tablespoons Basil seeds (Tukmaria)
  • ½ cup Falooda sev starch vermicelli noodles
  • 4 scoops Kulfi or vanilla ice cream see notes
  • ¼ cup Pistachios and almonds sliced optional
  • 4 cups Milk, cold

Rose Water Syrup

  • 1 ½ cup sugar
  • 1 cup water
  • 1 ½ teaspoon lemon juice
  • 1 teaspoon rose water or rose essence
  • Red or pink food color optional

Kulfi

  • 1 cup Ricotta cheese
  • 1 cup evaporated milk
  • ¾ – 1 cup Sweet condensed adjust to taste
  • Sliced Almonds & pistachios
  • ½- 1 teaspoon Green Cardamom powder
  • Pinch saffron optional

Instructions
 

Rose Water Syrup

  • Add sugar and water to a pot, and cook the mixture on low flame, stirring occasionally until the sugar has dissolved into the water. Add red or pink food color if using, and stir.
  • Turn off the heat, then add 1 ½ teaspoons of lemon juice.
  • Cool completely and stir in rose water or rose essence.

Kulfi Ice Cream

  • Add the ricotta cheese, evaporated milk and sweetened condensed milk to a blender and mix until smooth.
  • Stir in chopped almond and/or pistachio, cardamom and saffron, if using.
  • Pour mixture into an airtight container and freeze until firm.
  • Once firm, slice as desired.

Falooda Assembly

  • Soak the basil seeds (tukmaria) in 1 cup of water for 10-15 minutes, until they form a “gel coating”. Set aside.
  • In a tall glass add 1-2 tablespoons of rose syrup, add falooda sev, basil seeds, and 1 slice of the kulfi ice cream.
  • Top the glass with milk.
  • Garnish with pistachios and almonds.
  • Serve with a straw and spoon.
  • Repeat for all.

Notes

  1. Kulfi can be replaced with store-bought ice cream.  Vanilla or pistachio ice cream would work best for this recipe
  2. Rooh Afza is a rose sugar syrup found in many Indian/Pakistani stores. 
  3. Falooda Sev is a type of vermicelli noodles made with cornstarch, usually found at Indian/Pakistani stores.
